Emily’s scrumptious, secret recipe, delicious, homemade biscotti are so sought after by friends and now, customers, that she’s finally coming to grips with the reality of having a hit on her hands. Her big secret: it’s all gluten free! Don’t shrug your shoulders – we’ll explain how amazing this benefit is for millions of people who suffer from serious digestive problems*.
Isn’t that amazing? We thought so too. We can’t get enough of Emily’s biscotti and although we do not have any issues with gluten, her biscotti is delicious regardless of this marvelous benefit. When we met Emily at the South Kona Market and tried one of her Coco Mac Nut biscotti, which we declared was as good as we’ve ever had, did she tell us what we were raving about.
“One day I was longing for the biscotti I had in Europe, so I started to experiment with a gluten free version, after going on a gluten free diet at the recommendation of my doctor. It took me several months to get it right, every time you take on the challenge of changing a traditional recipe to a gluten free version you face challenges. Once I had made them successfully I gave them as gifts. They became so popular I thought “time to start a business” and the result is Big Island Biscotti. I feel the business idea is truly a gift from Pele!”
