Gluten free, a gift from Pele!

Emily Peacock is becoming famous on the Big Island of Hawaii.

Emily’s scrumptious, secret recipe, delicious, homemade biscotti are so sought after by friends and now, customers, that she’s finally coming to grips with the reality of having a hit on her hands.  Her big secret: it’s all gluten free!   Don’t shrug your shoulders – we’ll explain how amazing this benefit is for millions of people who suffer from serious digestive problems*.

Isn’t that amazing?  We thought so too.  We can’t get enough of Emily’s biscotti and although we do not have any issues with gluten, her biscotti is delicious regardless of this marvelous benefit.  When we met Emily at the South Kona Market and tried one of her Coco Mac Nut biscotti, which we declared was as good as we’ve  ever had, did she tell us what we were raving about.

“One day I was longing for the biscotti I had in Europe, so I started to experiment with a gluten free version, after going on a gluten free diet at the recommendation of my doctor.  It took me several months to get it right, every time you take on the challenge of changing a traditional recipe to a gluten free version you face challenges. Once I had made them successfully I gave them as gifts.  They became so popular I thought “time to start a business” and the result is Big Island Biscotti.  I feel the business idea is truly a gift from Pele!”


Emily manages a Kealakekua Bay Bed and Breakfast, which is where she started baking biscotti, scones, banana bread, coffee cake, tea cakes, etc. all gluten free.   She knew she was onto something when people started to ask her “I love these pastries, may I have the recipes?”

She’s not about to give her secrets away, and we’re not about to ask.  As long as we know where to find her, we’re all good.   At this very moment, the Big Island has Emily to all to ourselves primarily at the South Kona Market. What is Gluten?

* From the Latin ‘gluten’ or ‘glue’  – a binding agent in wheat, an additive to foods otherwise low in protein.  Although gluten provides some protein content, it is not water soluble and can be very difficult to digest. It is referred to as a “problem” protein and causes many to develop the disease celiac.

“Celiac” disease is an autoimmune condition triggered by gluten, the “problem” protein found in everything from pasta to bread to cookies. Over 1% of Americans have this disease and it is estimated that as high as 10% are undiagnosed.  The only known treatment for celiac disease— which can cause acute damage to the small intestine and the digestive system as a whole — is a lifelong gluten-free diet.

    I’ve been enjoying Emily’s Big Island Biscotti treats for a few months now. The are delicious tasting and have a wonderful texture. You’d never know that they are good for you (gluten free); they are that yummy.

    Honestly- I thought Gluten free was a gastronomic tragedy until I tasted these biscotti’s. They are one of the best, if not the best biscotti I’ve tasted. Worth checking out- even if you are not gluten free.

    Big Island Biscotti! I never gave biscotti a second thought until now! These are just fabulous and I don’t have to “splurge” on wheat to enjoy something decadent. Now if we could only get them in California…..
